today, i (jane) am sharing a super delicious recipe that i made for lunch the other day. i made this completely in my dorm room and school dining hall- but it only really requires a microwave. i am personally calling it “veggie stuffed sweet potato skins.”
if you have access to an oven, these would be yummy baked too.
1 sweet potato (i got a pretty big one for two people)
1/2 avocado (i used a full avo for two people)
bag of frozen vegetable blend
pinch of salt, pepper, chili flakes and any other seasoning if desired
first, we microwaved the potato for 2min. (super important that you create fork holes in the potato first… otherwise it will explode!!)
then we cut the potato in half and put it back in the microwave until it was soft: another 5min.
next, we scooped out the potato and mashed it with the avocado.
we had access to a “stir fry” station at school where we ordered plain veggies with teriyaki sauce. however, we could have easily heated up a bag of frozen veggies and gotten the same result.
the veggies got mixed into the mash.
finally, we reloaded our potato skins and sprinkled salt, pepper, and chili flakes.
